Practically all the mid ranage and high mountain bikes made since about 2018 are amazing if you can set them up to "fit" you. Handle bar width, stem length, a seat the right width for you, seat height, pedals the right size shape and convexity preference, all of these fittings are reasonably easy.
However Suspension setup is hard because it is dynamic and changes if your weight changes. Notes here for me later for my Stumperjump Evo Comp Alloy model year 2022.
